Ingredients

1 cup of Quinoa

1 kilogram of Beef brisket

1 Sliced corn

1 Turnip in pieces

2 Carrots in pieces

½ pound of Pumpkin in pieces

2 White potatoes in pieces

1 pound of Yuca in pieces

½ Cauliflower

2 tablespoons of Chopped onion

1 Chopped garlic clove

1 tablespoon of Butter

Oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a pot, boil the meat in abundant boiling water for one hour.

Step 2 : Add the corn, turnip, carrots, and pumpkin, and cook over medium heat for 20 minutes.

Step 3 : Incorporate the potatoes, yuca, and cauliflower, and cook for another 10 minutes.

Step 4 : Season with salt and pepper.

Step 5 : Then, remove the meat from the pot and cut it into cubes.

Step 6 : Strain the broth and set aside the liquid, vegetables, and cauliflower separately.

Step 7 : In another pot, heat oil and sauté the onion and garlic over medium heat for 4 minutes.

Step 8 : Add two cups of water and the quinoa.

Step 9 : Season with salt and pepper, and cook over low heat for 15 to 20 minutes until the quinoa is fluffy.

Step 10 : Add the butter, mix with a fork, and remove from heat.

Step 11 : Finally, serve the vegetables, cauliflower, and meat accompanied by the quinoa and hot broth.
