Ingredients

2 kilograms of Chicken

1 kilogram of Beef brisket

1 Lamb leg

½ pound of Soaked tunta

½ pound of Potato

4 Corn on the cob

4 Chopped carrots

2 Chopped turnips

2 Sprigs of parsley and celery

3 Bay leaves

2 tablespoons of Ground red chili

4 Small onions

1 cup of White wine

1 cup of Beer

¼ teaspoon of Whole black pepper

1 Locoto (hot pepper)

4 Olives

7 Grapes raisins per person

¼ teaspoon of Oregano

1 pinch of Salt

Preparation

Step 1 : First, it is necessary to cook the beef in a pot with water and salt until tender.

Step 2 : Once ready, add the lamb and chicken, which have been previously washed.

Step 3 : Next, incorporate the roasted chili, carrot, turnip, and onion.

Step 4 : Season the mixture with whole pepper, garlic, bay leaf, parsley, celery, red pepper, and salt to taste.

Step 5 : Then, add the peeled potato and let it cook until ready.

Step 6 : Meanwhile, in another pot, boil the four cobs of corn with a little anise, salt, and sugar if a sweeter flavor is desired.

Step 7 : On the other hand, the tunta, after being soaked and peeled, are lightly cut in half and filled with a slice of cheese for each.

Step 8 : These tunta are cooked in vapor.

Step 9 : Once the seasoned meats and vegetables are cooked, add wine and beer to the pot to enhance the flavor.

Step 10 : Sprinkle with oregano and let the preparation boil for about 10 minutes.

Step 11 : To serve, place the meats on a deep plate along with the vegetables, potatoes, and broth.

Step 12 : The tunta and corn cobs are served on a separate platter.
