The Chuquisaca Picana is a traditional Bolivian dish, cooked with patience and love. Chuquisaca Picana
Ingredients
2 kilograms of Chicken
1 kilogram of Beef breast
1 Lamb back
1 Medium fresh cheese
1 ½ pound of Soaked and peeled tunta
4 Large potatoes
¼ pound of Pumpkin
3 Carrots
1 Turnip
2 Sprigs of parsley and celery
3 Bay leaves
4 Green chilis
1 Onion
1 cup of Wine
1 cup of Beer
½ teaspoon of Whole white pepper
2 tablespoons of Whole red pepper
½ teaspoon of Crushed oregano
1 teaspoon of Anise
1 tablespoon of Sugar
1 pinch of Salt
Preparation
Step 1 : In a pressure cooker with one and a half liters of boiling water, cook the breast for an hour until tender.
Step 2 : Then add the lamb and chicken.
Step 3 : While the meats cook, season them with roasted green chili, carrot, turnip, pumpkin, and onion.
Step 4 : Add pepper, bay leaves, parsley, whole celery, red pepper, and salt to taste.
Step 5 : When the meats are halfway cooked, add the whole potatoes to the pot.
Step 6 : Meanwhile, in a separate pot with hot water, cook the corn with the husk wrapped in cloth and a little sugar.
Step 7 : Two hours before, soak the tunta in warm water to soften it, peel and wash it, then fill it with cheese.
Step 8 : Cook it over a colander with steam from hot water.
Step 9 : Once the potatoes and meats are ready, add wine and beer, sprinkle with oregano, and let it boil.
Step 10 : To serve, place in a deep dish the meats with vegetables, two potatoes, and broth.
Step 11 : The tunta and corn are served separately on a platter.
Step 12 : You can also accompany with cheese and llajwa if desired.
