Step 2 : Once melted, it is recommended to temper it by placing it over a bowl of cold water and ice, stirring constantly.
Step 3 : Next, briefly heat the chocolate and measure the temperature, which should be 29°C.
Step 4 : Then, distribute the dried tropical fruits inside the heart-shaped chocolate molds, which can also be silicone molds.
Step 5 : Proceed to fill each mold with the previously tempered white couverture chocolate, gently tapping the molds to level the surface.
