Finally, butter and pisco are added to enhance the flavors.
Quinoa Mazamorra
Ingredients
½ pound of Quinoa
3 cups of Water
2 Chancaca sticks
½ cup of Raisins
½ cup of Pisco
Whole cinnamon
Clove
1 pinch of Salt
Ground cinnamon
2 tablespoons of Butter
Preparation
Step 1 : The quinoa is rinsed and cooked in water for 10 minutes.
Step 2 : Meanwhile, the chancaca is grated and placed in a pot over medium heat with whole cinnamon, clove, and enough water to cover it, until a smooth syrup is obtained.
Step 3 : Then the chancaca is removed from heat, strained, and mixed with the cooked quinoa, raisins, and a pinch of salt.
Step 4 : Bring to a boil, then add the butter and pisco.
Step 5 : Finally, remove from heat and serve sprinkled with ground cinnamon.
