Cornstarch Alfajores
Ingredients
200 grams of Cornstarch
200 grams of Flour
250 grams of Manjar Blanco
200 grams of Butter
1 cup of Sugar
2 Egg yolks
1 tablespoon of Pisco or Singani
Lemon zest
1 teaspoon of Baking soda
1 tablespoon of Royal (baking powder)
3 tablespoons of Grated coconut
Preparation
Step 1 : To prepare these delicious desserts, start by making a firm cream by beating the butter or margarine with the sugar.
Step 2 : Then add the pisco, the yolks one by one, and the lemon zest.
Step 3 : Next, sift the dry ingredients and incorporate them into the previous mixture, mixing well until combined.
Step 4 : Once a thick dough is obtained, roll it out with a rolling pin on a floured surface and cut into small circles, placing them on greased molds.
Step 5 : Then, bake for a short time, avoiding browning, to maintain a white color.
Step 6 : After cooling, join two cookies together with manjar blanco filling.
Step 7 : Before serving, coat the edges with grated coconut and sprinkle with powdered sugar.
