Cheese Turnovers for Api
Ingredients
4 cups of Sifted wheat flour
2 tablespoons of Warmed melted vegetable fat
¼ teaspoon of Salt
4 tablespoons of Sugar
Boiling water
1 Medium cheese, not too salty
1 teaspoon of Baking soda
Oil for frying
Preparation
Step 1 : In a bowl, mix the flour, salt, sugar, and fat until the latter disappears.
Step 2 : Pour in boiling water and quickly stir with a wooden spoon, avoiding lumps, until obtaining a smooth, somewhat sticky dough.
Step 3 : Let the dough rest for a few minutes.
Step 4 : Form small balls with the dough and sprinkle flour onto the rolling surface.
Step 5 : Roll out the dough into an oval shape, very thin, like paper slices, to help it increase in volume.
Step 6 : Place crumbled cheese in the center of each dough portion, fold the dough by wetting the edges with a little water, and press with your fingers; then seal finely to shape the turnovers.
Step 7 : In a deep pot with hot oil, fry each turnover until golden and puffed up, basting with a spoon.
Step 8 : Yielding 25 medium turnovers, place them on absorbent paper to remove excess oil.
Step 9 : To serve, dust the turnovers with powdered sugar.
Step 10 : It is recommended to accompany them with api.
