Cheese pastry or fried cheese empanada is an essential dish on every Bolivian table. It reaches its peak popularity in January during the Alasitas festival, where locals and visitors gather to enjoy these pastries with a hot purple api. Cheese Pastry
Ingredients
3 cups of All-purpose flour
2 tablespoons of Clumps of lard or soft butter
1 teaspoon of A pinch of salt
3 tablespoons of Sugar
1 cup of Hot water
1 Grated medium fresh cheese
1 liter of Oil
Powdered sugar as needed
Preparation
Step 1 : In a bowl, place the sifted flour, salt, sugar, lard or butter, and hot water. Mix with a wooden spoon to avoid burns.
Step 2 : Then, knead well with your hands and divide the dough into approximately 9 balls. Cover with plastic wrap and let rest for 15 minutes.
Step 3 : Now, on a floured surface, flatten the balls with a rolling pin until thin.
Step 4 : Place grated cheese in the center of each dough disc, fold and press the edges to seal, then crimp the borders.
Step 5 : In a large, deep skillet, heat the oil. When hot, fry the pastries one by one on both sides until golden and puffed. Remove and drain on paper towels.
Step 6 : To serve, sprinkle with powdered sugar on top.
