Thimpu

The Thimpu recipe is a traditional Bolivian dish from the valleys, simple to prepare and with comforting flavors. Ingredients

1 kilogram of Beef

1 Parsley sprig

1 Onion

2 Carrots

1 Small cabbage

6 Peeled potatoes

2 cups of Soaked and peeled chuno (dried potato or meat snack)

1 ½ cup of Rice

Oil

Preparation

Step 1 : In a pot with boiling water and salt, cook the beef, onion, carrot, and parsley.

Step 2 : Let the chuno boil and then drain.

Step 3 : When the meat is almost cooked, add the shredded cabbage and let it cook. Then add the chuno and potatoes.

Step 4 : Meanwhile, cook the rice with water and salt.

Step 5 : To make the sauce, chop 3 onions into julienne and fry in oil until translucent. Then add ground yellow chili and fry.

Step 6 : To serve, pour the strained soup into a plate and accompany the meat with chuno, potatoes, rice, and cabbage leaves.

Step 7 : Pour the sauce over before bringing to the table.
