Ingredients

4 tablespoons of Quinoa flakes

¼ liter of Milk

3 Eggs

2 tablespoons of Cornstarch

1 tablespoon of Butter

30 grams of Grated Comté cheese

3 tablespoons of Crushed spinach

Garlic

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare this soufflé, start by mixing the cornstarch and quinoa flakes with fresh milk in a pot.

Step 2 : Then, cook over low heat until the mixture thickens.

Step 3 : Remove the pot from the heat and add the butter and egg yolks, mixing well.

Step 4 : Next, set aside one-third of this initial mixture.

Step 5 : Preheat the oven to 200°C and butter the soufflé dish.

Step 6 : Beat the egg whites to stiff peaks and gently fold them into both mixtures.

Step 7 : To assemble the soufflé, pour the cheese mixture first into the prepared dish, then carefully pour the spinach mixture in the center.

Step 8 : Finally, bake the soufflé for about 30 minutes until golden and fluffy.
