Ingredients

1 kilogram of Pork meat

3 cups of Soaked and peeled chuño

1 kilogram of Cooked corn

1 teaspoon of Pepper and garlic

1 tablespoon of Ground salt

1 Sprig of mint

3 Yellow chili pods

2 tablespoons of Breadcrumbs

3 Finely chopped garlic cloves

1 tablespoon of Ground cumin

1 liter of Water

Preparation

Step 1 : To prepare this delicious pork dish with corn and chuño, first remove the seeds from the chili pods.

Step 2 : Then, blend the chili pods in water along with the garlic cloves.

Step 3 : Next, cut the pork into medium-sized pieces, ensuring each is intended for an individual plate.

Step 4 : Place the pork pieces in a pot with water, adding a sprig of mint and seasoning with cumin, pepper, powdered garlic, and a pinch of salt.

Step 5 : Cook everything for 15 to 20 minutes, then add the peeled corn and chuño.

Step 6 : It is important to monitor the water level during cooking, adding more hot water if necessary.

Step 7 : If, at the end of cooking, the dish is cooked but too much broth remains, thicken it by adding 2 tablespoons of breadcrumbs and 2 tablespoons of bran.

Step 8 : Once the dish reaches the desired consistency, stir well and finish with a thick texture.

Step 9 : To thicken even more, you can add more breadcrumbs.

Step 10 : Finally, serve in deep bowls (preferably clay), accompanied by slices of locoto (green or yellow chili) and a piece of bread on the side plates.
