Peaceful Plate

The Peaceful Plate, with corn on the cob, fava beans, potatoes, and fried cheese, is a traditional Bolivian delight. The locoto and quirquiña llajhua add an ideal spicy touch to enjoy on any occasion. A combination of flavors that will surely win your palate.

In the La Paz cuisine, corns and fava beans are cooked carefully, wrapped and washed.

The potatoes, with their skin, are boiled precisely.

The slices of cheese, golden and sprinkled, are a delight in every bite.

Ingredients

4 Large corns

8 Pureja potatoes

1 pound of Fava beans with shells

1 Medium cheese

1 tablespoon of Sugar

1 teaspoon of Anise

1 pinch of Salt

Oil

1 Tomato

5 Locotos

5 Quirquiña sprigs

1 pinch of Salt

Preparation

Step 1 : The corns are washed with their husks and cooked in hot water with sugar and anise, previously wrapped in a well-tied small cloth.

Step 2 : The well-washed fava beans are cooked with shells.

Step 3 : In another pot, the potatoes with shells are boiled in plenty of hot water with salt, carefully washed.

Step 4 : Cheese slices are cut, sprinkled with flour to prevent melting, and fried in plenty of hot oil on both sides; once golden, they are removed and kept warm.

Step 5 : For the llajhua preparation, wash the ingredients, remove the seeds from the locotos and the tomato seeds.

Step 6 : In a mill or blender, blend all together with the quirquiña.

Step 7 : Finally, mix with the tomato seeds and season with salt.

Step 8 : It is also possible to cook the fava beans along with the potatoes with salt to taste if preferred.
