Majao
Ingredients
5 cups of Water
½ kilogram of Charque
1 cup of Rice
½ cup of Finely chopped onion (unwashed)
½ cup of Peeled and finely chopped tomato
¼ teaspoon of Salt
½ cup of Oil
4 Urucú seeds (annatto) soaked in water
½ cup of Water or broth
1 teaspoon of Salt
½ Fried cooking plantain, per person
2 Sliced cooked and fried yuca, per person
1 Fried egg, per person
Preparation
Step 1 : In a pot, place five cups of water.
Step 2 : Once it starts boiling, add the charque and cook until soft.
Step 3 : Then remove, mash, and shred it.
Step 4 : In the water used to cook the charque, add the rice and salt.
Step 5 : Cook over medium heat for about twenty-five minutes, until well cooked but not dry.
Step 6 : In a small pan over high heat, heat a quarter cup of oil.
Step 7 : Add the shredded charque and fry until golden.
Step 8 : Then remove from heat.
Step 9 : Pour the remaining quarter cup of oil into a pot over high heat.
Step 10 : Add the onion and let it brown.
Step 11 : Then add the tomato, followed by the strained urucú coloring, water or broth, and salt.
Step 12 : Let it cook for about five minutes.
Step 13 : Add the fried charque, mix, and add to the rice pot.
Step 14 : Combine everything, avoiding dryness.
Step 15 : Serve hot with a fried egg on top, half a fried plantain, and fried yuca as well.
