8 Pieces of beef tenderloin

8 Large escalloped potatoes

8 Eggs

¼ teaspoon of Pepper

Oil

1 pinch of Salt

¼ cup of Oil

1 White onion

1 Large tomato

1 Locoto (hot pepper)

½ tablespoon of Pepper

1 pinch of Salt

Preparation (simple version)

Step 1 : Cut the meat into one-inch pieces and fry them in a skillet with a little oil, seasoning with salt and pepper once cooked. Lomo Montado - Preparation - Step 1
Step 2 : Fry the potatoes in oil until golden and drain, sprinkling salt on top. Lomo Montado - Preparation - Step 2

Preparation

Step 1 : Cut the meat into one-inch thick pieces and fry them in a skillet with a teaspoon of oil.

Step 2 : Once bloodlines start to appear on top, season with salt and pepper on both sides.

Step 3 : In another skillet, heat one cup of oil and fry the cut potatoes until golden brown.

Step 4 : Drain and sprinkle with salt.

Step 5 : Fry the eggs one by one in a little oil until the whites are white.

Step 6 : In a saucepan, heat a quarter cup of oil and add the onion to brown it.

Step 7 : Then add the chopped tomato, locoto, parsley, salt, and pepper.

Step 8 : Let it cook for fifteen minutes and then remove from heat.

Step 9 : To serve, place the grilled meat on a flat plate, then the egg, and on top, add a little sauce.

Step 10 : Serve with fried potatoes on one side of the plate.
