Lamb Thimpu
Ingredients

1 kilogram of Lamb meat (leg or knots)
1 cup of Cooked and moist chuno
1 cup of Rice
1 Peeled onion
5 cups of Beef broth
1 Peeled carrot
1 cup of Ground yellow chili
2 Onions
3 Peeled and ground garlic cloves
3 tablespoons of Oil
4 cups of Water
Preparation
Step 1 : In a large pot, bring water to a boil and add the cut lamb meat into rectangular pieces.
Step 2 : Add the onion, carrot, and salt, and cook until the meat is tender.
Step 3 : Let it rest.
Step 4 : In another pot, heat oil and fry the onion until it turns golden.
Step 5 : Then add the chili and garlic.
Step 6 : Continue stirring and add the previously reserved beef broth.
Step 7 : Cook for another hour, stirring constantly until the liquid reduces and it becomes a thick sauce.
Step 8 : Season with salt and remove from heat.
Step 9 : Add 4 cups of water to the pot and, once boiling, incorporate the rice and salt.
Step 10 : Cook until the rice is soft and porridge-like.
Step 11 : Serve on plates, taking care that the chili sauce does not mix with the rice.
