Hake with Quinoa and Algae

Ingredients

2 Hake fillets

30 grams of Quinoa

Carrot juice

Lemon

Parsley

Fresh ginger

1 pinch of Salt

2 grams of Agar-agar

Kombu (sea kelp)

Herbs for the broth

2 Spinach leaves

Preparation

Step 1 : To prepare this dish, first soak the kombu seaweed and cook the quinoa.

Step 2 : At the end of the cooking, add the carrot juice, chopped parsley, ginger juice, lemon zest, and agar-agar.

Step 3 : Cook the mixture for 3 minutes, stirring constantly, then pour it into a bowl to cool.

Step 4 : To assemble the roll, place the fish on the soaked seaweed, followed by a spinach leaf, a layer of quinoa, another piece of fish, another spinach leaf, and again quinoa.
