Chuño Phuti
Ingredients

¼ kilogram of Dried chuño
2 teaspoons of Salt for boiling the chuño
¼ cup of Oil
½ cup of White onion, finely chopped
¼ cup of Tomato, peeled and finely chopped
1 Crumbled fresh cheese
3 Whole eggs
1 teaspoon of Salt
Preparation
Step 1 : The night before preparation, soak the chuño in warm water.
Step 2 : The next day, once soaked, peel it, removing all its shell.
Step 3 : Then, cut it into four parts and rinse several times until the bitter taste disappears.
Step 4 : Next, boil it with plenty of water and two teaspoons of salt.
Step 5 : Once cooked, drain it in a colander.
Step 6 : In another pot, heat the oil over medium heat.
Step 7 : Once hot, add the onion and fry until golden.
Step 8 : Then, add the tomato, mix, and let cook for about five minutes.
Step 9 : Next, add the eggs and mix again.
Step 10 : Subsequently, add the cooked and drained chuño, and let it cook for about five minutes.
Step 11 : Finally, before serving, add the cheese and stir over low heat.
