Bolivian Keperi
Ingredients

2 kilograms of Tender keperi
¾ cup of Lemon juice
1 liter of Water
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : To prepare the keperi, start by making a marinade with lemon juice, salt, cumin, and pepper.
Step 2 : Next, place the keperi piece in a dish and cover it with the marinade, then cover and let it rest for about three hours.
Step 3 : After that time, add water to the dish and cover with aluminum foil.
Step 4 : Then, bake at low heat for approximately three hours, turning the piece and cooking for an additional 45 to 60 minutes.
Step 5 : Remove the foil and let the piece brown on both sides for about 20 minutes.
Step 6 : Finally, serve the keperi accompanied by rice, fried yuca, vegetable salad, and your preferred llajua.
