Ingredients

1 Beef tongue

½ Fresh medium cheese

8 White potatoes

1 pound of Soaked and peeled tunta

2 Onions

1 Tomato

1 Finely chopped parsley portion

2 cups of Peas

4 Peeled yellow chili pods

2 Chili pods cooked over the grill

1 pinch of Salt

Oil

1 teaspoon of Whole peppercorns

1 ½ teaspoon of Cumin

3 Garlic clove (charred over the grill)

1 Thinly sliced onion

½ Finely chopped tomato

1 pinch of Salt

1 A splash of oil

Preparation

Step 1 : To prepare this dish, it is recommended to start by properly cooking the tongue.

Step 2 : It's important to grip it at the top and tap the tip on a stone to remove excess fat.

Step 3 : Then, wash it thoroughly and place it in a pressure cooker with boiling water and salt, adding half of the seasonings.

Step 4 : Cook for about an hour and a half until the meat is tender and cooked through.

Step 5 : Once ready, peel and cut the tongue into medium diagonal pieces, reserving the broth.

Step 6 : To prepare the aji, sauté in a pan with hot oil the onion, parsley, oregano, peeled tomato scraped, peas, and the remaining seasonings.

Step 7 : Add a pinch of salt and the yellow chili, previously ground in a mortar with a bit of water, and pour in five ladles of the reserved tongue broth.

Step 8 : Cook until the peas are tender, then add the tongue and let simmer for ten minutes to blend the flavors.

Step 9 : Meanwhile, boil the potatoes in hot salted water.

Step 10 : Fill the soaked and peeled tunta with a slice of cheese and steam until cooked.

Step 11 : When serving, place the tongue with its juices and top with salsa, accompanied by two cheese-stuffed potatoes.
