Ají de fideos

Ají de fideos is a traditional dish from the highland region of Bolivia, with a deep-rooted history in mining culture. However, nowadays, this dish has become popular and can be found in different regions of the country.

Ají de Fideos is a tasty and comforting stew made with noodles and a spicy chili sauce. Usually, fine short pasta noodles such as angel hair or soup noodles are used, along with lots of parsley.

Its preparation is relatively simple and is offered in many restaurants known for their traditional cuisine.

Ingredients

Ají de fideos

3 teaspoons of Ground yellow chili (paste or powder)

2 Chopped garlic cloves

2 Beef broth cubes

4 Peeled and diced potatoes

1 Diced carrots

Chopped fresh parsley

½ cup of Peas

3 cups of Noodles

6 tablespoons of Oil

¼ kilogram of Ground beef

2 Large onions

2 Medium tomatoes

1 pinch of Salt

1 pinch of Pepper

4 cups of Water

Preparation

Step 1 : In a pot, sauté finely chopped onion in three tablespoons of oil until it becomes transparent.

Step 2 : Then, add the peeled and chopped tomato, letting it release its juice.

Step 3 : When the preparation is halfway fried, add the garlic.

Step 4 : Next, season with salt and pepper, and add the ground beef along with one cup of water to cook.

Step 5 : Then, add the yellow chili, noodles, and potatoes to the mixture.

Step 6 : Toast the noodles in the remaining oil and then add them to the stew pot.

Step 7 : Add the remaining water and cook until the noodles are done.

Step 8 : If the water runs out before the noodles are cooked, add more water and adjust seasoning with salt and pepper to taste.

Step 9 : Finally, serve the dish sprinkled with chopped parsley on top.
