Aji de cochayuyo
Ingredients
5 tablespoons of red aji
6 hard-boiled egg
1/2 cup of cooked peas
1/4 pound of cochayuyo seaweed
6 potatoes
2 small diced tomato
1 medium cheese
1/2 teaspoon of salt
1/2 teaspoon of pepper
1 pinch of garlic powder
1 liter of water
1 finely diced onion
1 tablespoon of oil
Preparation
Step 1 : To prepare this delicious dish, first soak the cochayuyo a day in advance.
Step 2 : Once soaked, rinse it well and cook in a pressure cooker for about 15 minutes.
Step 3 : Then, drain and set aside.
Step 4 : Cook the peas, potatoes, and hard-boiled eggs separately in different pots until ready, and set aside.
Step 5 : In a skillet, heat a tablespoon of oil.
Step 6 : Add the diced onion and small diced tomato, sauté, and then add the red aji.
Step 7 : Season with salt, pepper, and garlic powder.
Step 8 : In the same skillet where the onion, tomato, and aji mixture was prepared, add the cooked and chopped peas and cochayuyo.
Step 9 : If necessary, add a little water to prevent the mixture from becoming too dry.
