Api

This delicious and nutritious beverage, made from purple corn, is an essential component of Bolivian cuisine, especially in the highland regions. The preparation of api begins with purple corn, which is ground into a fine flour. This flour is cooked slowly in water, stirring constantly to prevent lumps from forming. During cooking, sugar and a mixture of aromatic spices, such as cinnamon, cloves, and orange peel, are added, providing a warm and fragrant flavor to the drink.

It is a thick and slightly sweet drink, with a deep purple color and an irresistible aroma. Api is traditionally served hot, in bowls or large glasses, and is a popular choice for breakfast or as a comforting snack at any time of the day.

In some variations, api is made with white or yellow corn, and may also include a touch of anise for an extra flavor. Regardless of the type of corn used, the essence of api remains the same: a nourishing and satisfying drink that celebrates Bolivia's native ingredients.

Api is often accompanied by buñuelos, pastries, or empanadas, creating a perfect combination of flavors and textures. This morning ritual is common at markets and street stalls, where vendors prepare fresh api daily, serving it to passersby looking for a warm and energizing start to their day.
