Then add the crumbled fresh yeast, sugar, and warm water, letting it rest until the yeast begins to foam.

Next, add olive oil, more water, and brown sugar, kneading until a soft, smooth dough is achieved.

Cover with a clean cloth and let it rest until it doubles in size.

Finally, shape the buns, let them rise again, and bake until golden.

Ingredients

300 grams of Whole wheat flour

1 teaspoon of Salt

3 cups of Bran

25 grams of Fresh yeast

1 teaspoon of Sugar

2 tablespoons of Olive oil

400 milliliters of Water

20 grams of Brown sugar

Egg for brushing

Preparation

Step 1 : To prepare the whole grain bread, mix the whole wheat flour, salt, and bran in a bowl.

Step 2 : Then, make a well in the center and add the crumbled fresh yeast, sugar, and a bit of warm water.

Step 3 : Mix everything and let it rest until the yeast starts to foam.

Step 4 : Next, add the olive oil, incorporate the remaining water and brown sugar, and knead the mixture until smooth and elastic.

Step 5 : Cover with a clean cloth and let it rise in a warm place until the dough doubles in size.

Step 6 : Then, knead gently and shape into approximately 60g loaves.

Step 7 : Place them on a baking sheet and let them rise again in a warm place, covered with a clean cloth.

Step 8 : Finally, brush the loaves with beaten egg and bake in a preheated oven at 180°C for about 30 minutes, or until golden and ready to enjoy.
