Ingredients
1 pound of Peeled corn
2 Egg yolks
2 tablespoons of Sugar
1 pinch of Salt
2 Egg whites
¼ kilogram of Oven-roasted pork shoulder with salt and pepper
¼ kilogram of Charque (dried salted meat)
2 Finely chopped onion
1 Tomato
3 tablespoons of Ground and fried red chili pepper
2 Chopped hard-boiled eggs
¼ cup of Raisins
½ teaspoon of Pepper
14 teaspoons of Cumin
1 pinch of Salt

Preparation
Step 1 : The first step is to soak the corn in cold water for 4 hours, then cook it in boiling water until it bursts.
Step 2 : Next, grind the corn and add the egg yolks, sugar, and salt to form a smooth dough.
Step 3 : Meanwhile, finely chop the pork.
Step 4 : In a skillet, fry the onion in oil until transparent, then season with salt, pepper, and cumin.
Step 5 : Add the charque; once cooked, add the pork (optional) and chopped tomato, cooking until the tomato breaks down.
Step 6 : Then, add the red chili powder and half a cup of water, cooking until almost dry, finally mixing in the raisins and chopped eggs.
Step 7 : To assemble the tamales, take a portion of dough, flatten it in your hand, place 2 tablespoons of filling, and cover with another portion of dough.
Step 8 : Once ready, dip the tamales in egg whites and fry.
