A typical Bolivian dish, served on street skewers. Made with just a few ingredients, it is prepared by grating and mixing yuca with fresh cheese and eggs. Fried until golden and crispy on the outside, tender inside.
The simple ingredients and straightforward process make Sonso de yuca an ideal option to experiment with new flavors at the table.
Sonso de yuca
Ingredients
1 kilogram of Yuca
½ kilogram of Muzzarella
½ kilogram of Some hard cheese
2 tablespoons of Butter
1 ½ tablespoon of Milk
1 Egg
1 pinch of Salt
Preparation
Step 1 : The yuca is washed, peeled, and cut into cubes, then rinsed with cold water before placing it in a pot covered with water and salt.
Step 2 : Bring to a boil and cook in boiling water for 35 minutes.
Step 3 : Then, drain the water and mash the yuca until a purée forms.
Step 4 : The cheeses are grated and mixed with the yuca purée, kneading until a homogeneous consistency is achieved.
Step 5 : Gradually add the milk, butter, egg, and a pinch of salt, continuing to knead until a firm dough is obtained.
Step 6 : Divide the dough into 10 balls, stretch them to form elongated cylinders, and place them on skewers.
Step 7 : Grill these until golden.
Step 8 : Allow to cool before serving.
