Ingredients

1 cup of Quinoa

Creole cheese

1 Egg

Choice of vegetables, chopped very small

1 Medium onion (diced)

1 A handful of green beans (cut into small slices)

1 Grated carrot

1 A handful of chopped spinach

Olive oil

2 Garlic cloves, chopped

2 Medium-sized tomatoes

1 teaspoon of Salt

Powdered chili

1 pinch of Black pepper

Preparation

Step 1 : Soak the quinoa in a cup of hot water for 20 minutes, then boil it with 2 cups of water, a teaspoon of salt, and a beef-flavored bouillon cube.

Step 2 : Set aside.

Step 3 : In a skillet with a little oil, sauté the onion, spinach, and green beans.

Step 4 : Once the onion becomes transparent, remove from heat.

Step 5 : Grate the cheese and place it in a baking dish along with the cooked quinoa, vegetables, grated carrot, and most of the cheese.

Step 6 : Mix very well.

Step 7 : In a separate blender, purée the tomatoes and the remaining ingredients, adjusting the seasonings to taste.

Step 8 : Pour the sauce over the mixture in the baking dish and spread it evenly.

Step 9 : Mix the eggs with the remaining cheese very well and place on top of the quinoa.

Step 10 : Bake in the oven until the cheese is golden brown.
