Ingredients

1 Medium pork rind

¼ teaspoon of Oregano

14 tablespoons of Salt

2 Fresh mint sprigs

3 kilograms of Pork meat

½ tablespoon of Cumin

6 Garlic cloves

½ tablespoon of Ground black pepper

1 Pinch of sugar

1 Parsley sprig

2 tablespoons of Ground red pepper (pimentón)

2 teaspoons of Nutmeg

Dried orange peel

1 cup of Vinegar

Preparation

Step 1 : To prepare this recipe, place the pork rind in a pot, cover with water, and add two tablespoons of salt, two tablespoons of oregano, and a sprig of mint.

Step 2 : Let it rest overnight.

Step 3 : After this time, cook the pork and slice it into strips.

Step 4 : Blend cumin, garlic, remaining oregano, pepper, two tablespoons of salt, sugar, the reserved mint sprig, parsley, red pepper, nutmeg, orange peel, and vinegar until smooth.

Step 5 : Season the pork leaves with this prepared mixture.

Step 6 : After draining the pork rind, place it on a sturdy, clean cloth with the fat side up.

Step 7 : Add the seasoned pork on top and roll tightly, pressing firmly.

Step 8 : Wrap tightly and secure the ends.

Step 9 : Cook the roll in a pressure cooker with sufficient water and the remaining salt.

Step 10 : Cook until a knife inserted into the roll goes in easily.

Step 11 : Remove from the pot and place on a table with a weight on top, letting it rest for an entire day.

Step 12 : Finally, remove the roll from the cloth, slice it, and serve.
