Chuquisaca Sausage
Ingredients
1 kilogram of Pork meat
1 kilogram of Thick beef intestine
8 White potatoes
2 Leaf lettuce
5 Bread
1 tablespoon of Chopped parsley
1 tablespoon of Oregano
1 tablespoon of Chopped mint
1 Tail onion
Cinnamon stick
1 pinch of Sugar
Shredded orange peel
½ teaspoon of Clove
1 pinch of Ground cinnamon
1 tablespoon of Ground chili
1 tablespoon of Ground pepper
1 tablespoon of Ground cumin
4 Garlic cloves
1 Large onion
1 Tomato
1 pinch of Salt

Preparation
Step 1 : To prepare this recipe, start by carefully cleaning the intestine until it reaches a smooth texture and a transparent color.
Step 2 : Next, tie one end of the intestine with cinnamon thread, making sure it is pulled tightly.
Step 3 : Then, chop the tail onion, cut the onion into strips, and dice the tomato, setting them aside.
Step 4 : Subsequently, grind the pork meat and mix it with cloves, parsley, sugar, shredded orange peel, chopped green onion, cinnamon, ground chili, and salt to taste.
Step 5 : Insert the mixture into the intestine, kneading to compact the filling and sealing the end with cinnamon thread.
Step 6 : Then, peel and boil the potatoes in salted water, and wash the lettuce leaves in a solution of water with iodine.
Step 7 : For the tomato sauce, chop the onion and garlic, then add oil and salt.
Step 8 : Fry the sausages in hot oil until cooked, removing them from the heat.
Step 9 : Cut the bread in half and fry it in the same oil used for the sausages.
Step 10 : To serve, place the sausages on the bread on plates and accompany with lettuce, potatoes, and the prepared tomato sauce.
