Ingredients

375 grams of National wheat flour

¼ kilogram of Vegetable shortening

125 grams of Sugar

1 tablespoon of Salt

125 grams of Annatto (achiote)

2 Eggs

Pepper, cumin, allspice, oregano, and salt

½ Medium chicken

½ kilogram of Ground meat

5 Medium onion heads with stems

375 grams of Potato

125 grams of Sugar

125 grams of Shortening

1 cup of Warm water

Preparation

Step 1 : To prepare this recipe, the first step is to cook the chicken in enough water to cover it, without adding salt.

Step 2 : In another pot, boil the potatoes with their skins in hot water, previously washed.

Step 3 : Cut the onions into medium cubes and sauté them in a medium saucepan with hot shortening.

Step 4 : Once cooked, shred the chicken meat and set aside, discarding the bones.

Step 5 : Peel and grate the potatoes into another container.

Step 6 : Gradually add the chicken broth to the onions that are cooking, until it boils.

Step 7 : Add the seasonings, except for the salt, which will be added later with the sugar.

Step 8 : Cook the ground meat in the preparation, adding more broth if necessary to prevent it from drying out.

Step 9 : Incorporate the grated potato and chicken, mixing well at each step.

Step 10 : Cool in a container and refrigerate until the next day.

Step 11 : Mix the flour with 3/4 of the shortening, while cooking the annatto with the remaining fat.

Step 12 : In a bowl, combine the flour, sugar, salt, water, and the previously sifted annatto mixture.

Step 13 : Knead until you get a uniform dough, divide it into balls the size of your hand, and let them rest covered with plastic until the next day.

Step 14 : Before baking, roll out the dough balls with a rolling pin, fill them with the filling, add a slice of hard-boiled egg, and seal them in the shape of an empanada.

Step 15 : Brush the surface with the remaining egg and bake until golden.
