Aji de Chuno
Ingredients
1/2 kilogram of ground or cubed chopped meat
1/2 kilogram of soaked chuno the day before, washed, peeled, and chopped
4 peeled potatoes
1 diced small onion
1 diced tomato
1/2 cup of flour
salt to taste
1/2 teaspoon of oregano
1 pinch of pepper
1/4 teaspoon of cumin
1/4 teaspoon of powdered garlic or chopped garlic
2 teaspoons of meat seasoning
1 teaspoon of red Sibarita or red coloring from panca chili
oil as needed
1 cup of water as needed
Preparation
Step 1 : In a pot, place cold water and salt.
Step 2 : Then add the chuno and potatoes.
Step 3 : Cook until ready, drain everything, and cut the potatoes into four pieces.
Step 4 : In another pot, add 2 tablespoons of oil.
Step 5 : Fry the onion and tomato.
Step 6 : When golden, add the meat, salt, pepper, cumin, garlic, meat seasoning, red chili coloring, and approximately one cup of water.
Step 7 : Cover and let cook.
Step 8 : In a dish, place flour and coat the broken chuno.
Step 9 : In a pot or pan, heat 2 tablespoons of oil and brown the coated chuno.
Step 10 : Add the browned chuno to the meat stew, along with the cooked and chopped potatoes.
Step 11 : Let cook for another 5 minutes so that all ingredients absorb the flavors.
Step 12 : Then, the dish is ready to serve.
